Squirrel Dumplings
4-6 squirrels, cleaned and halved
1/2 cup carrots, chopped
1/2 cup celery, chopped
1/2 cup onion, chopped
water
flour
salt and pepper to taste

Put squirrels in dutch oven, cover with water and bring
to boil. Reduce heat and simmer until squirrels are tender.
After squirrels have cooked add carrots, celery and
onions. Remove pot from heat and remove squirrels
and take all meat from bones. Return meat to broth.

To make dumplings, put one cup flour intoa bowl, add
pinch of salt and slowly mix in water intill dough is thick
enough to knead. On a floured surface roll out dough
until approximatly 1/8 inch thick. Cut into strips and then
into about 2 inch sections. Bring broth to boil and
add dough strips. Add salt and pepper to taste. Cook
untill dough is done or about 5-7 minutes.

Baked Squirrel
2 squirrels halved
1/2 tsp. pepper
1 tsp. salt
1 bottle Italian dressing

Place squirrel halves in shallow baking pan, add salt,
pepper and Italian dressing. Marinate for 4-5 hours.
Place squirrel with marinade uncovered in oven at 350
degrees for 45-50 minutes or until done.

Rabbit Pot Pie
1 rabbit cooked
2 cans cream of potato soup
1 can cream of chicken soup
1 can mixed vegatables (drained)
2 pie crusts De-bone and chunk cooked rabbit. Mix
together soups and vegatables. Heat thoroughly. Add
rabbit chunks. In 10 inch pie pan place one pie crust. Put
in rabbit mixture and top with other pie crust. Bake at 350
until mixture is bubbly and crust is golden brown.

Barbecue Rabbit
1 rabbit, cut up
1 medium noin
2 T. vinegar
4 T. brown sugar
1/4 tsp. pepper
1 cup catsup
1 cup water
3 T. Worcestershire sauce
1/2 tsp. ground mustard
1/2 cup diced celery

Boil rabbit with onions until tender. brown meat and onoins
until brown in shortning. Mix together rest of ingredients and
pour over rabbit. bake at 350 degrees for 3 hours.
